Fast 800 Day Six- I Gained Weight

Starting weight: 79.8kg Today’s weight: 78.7kg

Urgh- there’s something monumentally dispiriting about dieting like crazy and not actually losing any weight. When I hopped on the scales this morning I had actually gained weight – .2kg again. Okay, I know it isn’t much, but when you are dreaming of losing about half a kilo a day it’s a step in the wrong direction.

Nonetheless, the sensible part of me understands that in reality 200g (or about 7oz) is nothing. That’s the difference between one trip to the bathroom or being slightly more dehydrated from one day to the next. As such, I’m going to use it as a means to be even more determined and choose my food wisely- I hope.

Today’s food was much the same I’m afraid, still struggling on lockdown rations although I made myself a great soup for dinner. In a day or so I’m planning a trip to the shops- how exciting that will be! (Who knew that a pandemic would come along and make something as ordinary as going to the supermarket feel so exciting- trawling the aisles of Aldi just for the thrill).

Fast 800 Dinner Day Six:

You’ll have to take my word for it that the following meal tastes way, way better than it looks. It’s actually stolen from a book I bought my daughter to take to university called Meat Free One Pound Meals.* I tried a few recipes before she left to see if it was suitable and actually this one was simple, healthy and really good. I’ve adjusted it slightly to make it less calorific but it still tastes absolutely delicious and is filling but low in calories. It’s probably more of a wintery soup- but it’s so delicious I’d eat it any time. If you prefer actual Fast 800 recipes there are a couple of really good official recipe books here* and here*

Ingredients: (for two portions)

2 onions, diced (seems like loads but this is what makes it taste so good)

2 garlic cloves

400g tin green lentils with liquid from the tin.

1 vegetable stock cube

2 tsp dijon mustard

Olive oil

Salt & pepper

Method:

Pan fry the onion and garlic in olive oil for just a few minutes – you want the onion to soften up rather than brown. Then add the tin of lentils (including liquid), the stock cube and the mustard. Simmer for around five minutes and season with salt and pepper. Add a small amount of water to make it more like soup consistency.

Transfer half the mixture to a food processor or blender and blitz it till smooth- you might need a bit more water too. Then return it to the pan with the unblended lentils. Check that it’s hot and then serve.
